You can expect mixed 4 to 6 or possibly more legs/knuckles in every 5 lb. They are best for steaming, boiling, grilling and baking. They are pre-cooked. You can reboil by dropping them into hot boiling water for 4 to 5 minutes. Do not overcook them or the meat will shrink.
